Ingredients

  • 1/4 Cup sesame seeds, toasted
  • 1/4 Cup minced ginger
  • 2 Tablespoons sesame oil
  • 2 Tablespoons rice wine vinegar
  • 1 Tablespoon Tabasco brand Original Red Sauce
  • 1 Tablespoon soy sauce
  • 2 cloves garlic, crushed
  • 1/2 Teaspoon salt
  • One 3 1/2-pound chicken, cut up into four pieces

Directions

Combine the sesame seeds, ginger, sesame oil, vinegar, Tabasco Sauce, soy sauce, garlic, and salt in a large bowl. Stir in the chicken until well coated. Cover and refrigerate for at least 2 hours, turning occasionally.

Preheat the grill to medium or oven to 450 degrees. Place the chicken on the grill rack or broiler pan. Cook the chicken, basting frequently, with the Tabasco Sauce mixture, until the juices run clear when the chicken is pricked with a fork, about 15 minutes on each side.

Instead of using pre-packaged barbecue sauce, which often contain high fructose corn syrup and tend to be very high in sodium, this recipe calls for more natural sources of sugar, including honey and molasses, and no added salt. Instead, you can find flavor in healthy ingredients. Garlic is good for your heart, while cayenne pepper and ginger provide anti-inflammatory protection. So enjoy the flavors and eat in good health!

Ingredients

5 tablespoons (3 oz) tomato paste
1 teaspoon ketchup
2 teaspoons honey
1 teaspoon molasses
1 teaspoon Worcestershire sauce
4 teaspoons white vinegar
¾ teaspoon cayenne pepper
1/8 teaspoon black pepper
¼ teaspoon onion powder
2 cloves garlic, minced
1/8 teaspoon ginger, grated
1½ lb chicken (breasts, drumsticks), skinless

Preparation

  1. Combine all ingredients except chicken in a saucepan.
  2. Simmer for 15 minutes.
  3. Wash chicken and pat dry. Place it on large platter and brush with half of sauce mixture.
  4. Cover with plastic wrap and marinate in refrigerator for one hour.
  5. Place chicken on a baking sheet lined with aluminum foil and broil for 10 minutes on each side to seal in juices.
  6. Turn oven to 350°F and add remaining sauce to chicken. Cover chicken with aluminum foil and continue baking for 30 minutes.

For me, this is a summer-only staple, and the reason is the BBQ sauce: It’s irresistible. I always make extra portions for dipping. Another reason this barbecue chicken is a warm-weather dish? Afterwards, everyone can jump in the pool and rinse off the sticky remnants of that finger lickin’ deliciousness. For reference, this is Kentucky masterpiece-style BBQ, clove-forward and aromatic, and on the sweet side thanks to the chemistry that happens between the apple cider vinegar, molasses, ketchup, chipotle peppers, cloves, and other seasonings. I made a version of this on my show—Tom and I double-booked friends for dinner and I pulled this together, along with baked beans and a lemon-basil granita, for what turned out to be a backyard feast. As far as I’m concerned, this is the best barbecue chicken I’ve had. Suddenly I’m wishing I made it more often. Keep in mind, the secret to this is the sauce. It’s all about the sauce.

1. Make the Spicy BBQ Sauce: Heat the oil in a saucepan over medium-high. Add the onion cook, stirring occasionally, until softened, about 5 minutes. Add the garlic cook, stirring constantly, until the garlic is golden, about 30 seconds. Add the ketchup, water, vinegar, molasses, Worcestershire sauce, chipotle peppers, salt, allspice, and cloves bring to a boil. Reduce the heat to medium-low, and simmer, stirring occasionally, until thickened, 13 to 15 minutes. Transfer the mixture to a blender. Remove the center piece of the blender lid (to allow steam to escape) secure the lid on the blender, and place a clean towel over the opening in the lid. Process until smooth. Cover and refrigerate until ready to serve.

2. Make the Barbecue Chicken: Preheat the grill to high (450°F to 550°F). Reserve 3/4 cup of the Spicy BBQ Sauce for serving.

3. Sprinkle the chicken with the salt and black pepper. Reduce the grill heat to medium (350°F to 450°F). Place the chicken, skin side down, on the lightly oiled grates grill, uncovered, until well marked, 8 to 10 minutes.

4. Reduce the grill heat to low (250°F to 350°F) cover and grill until a meat thermometer inserted in the thickest portion of the thigh registers 175°F, 35 to 40 minutes, basting with the remaining 1 3/4 cups Spicy BBQ Sauce every 5 minutes. Do not baste during the last 5 minutes to prevent cross-contamination.

5. Serve the chicken with the reserved 3/4 cup Spicy BBQ Sauce.


Spicy Mississippi Chicken Recipe

Chicken Leg Quarters were the first pieces of chicken that I learned to cook when I started out on my bbq journey. I could buy a bag of frozen quarters for .25 cents per pound, and that would feed a lot of people on the cheap.

Somewhere along the way I started calling this particular recipe my Spicy Mississippi Chicken and the name stuck….

You can use any piece of chicken for this recipe but I would definitely keep the skin on.

This recipe is all about the smoke and spice. There’s no marinade, brine, glaze or anything that will take away for the texture. The seasoning builds a nice crust on the skin and it’s almost crispy with a kick of heat.

For the seasoning I kept it pretty simple and used a combination of seasonings that were in the pantry. I knew I wanted it spicy so the whole thing revolved around the peppers. I used ground cayenne, crushed red pepper flakes, white pepper for back end heat and plenty of corse ground black. The heat was on point, and I used corse salt, sugar, onion and garlic flakes and few herbs to round it out. I used my Plastic Dredge Shaker with a wide-hole lid (You can also use this blend as a rotisserie seasoning it goes great on pork).

You can cook this chicken on any grill or smoker the key is the cook temperature. The pit needs to be running at 300 degrees to get the skin right. I used my Traeger pellet grill running with pecan pellets for this cook.

First I dried the skin with paper towel to remove any moisture then I coated each piece with a little peanut oil. The oil helps the seasoning stick and it also browns the skin.

Each piece of chicken is generously coated with the Spicy Chicken seasoning *recipe below. Place the seasoned chicken on the grill and cook until an internal meat thermometer reads 175 degrees in the thickest part of the thigh. If you’re cooking white meat chicken, it needs to hit 165 degrees internal – and I use my Thermoworks Thermapen to check my internals.

Once the chicken is done all you do is let it rest for 5 minutes and it’s ready to eat. Right away you’ll notice the skin is beautiful.

The spices and herbs give a crispy-like texture and it has a spicy punch without being too hot. You can always add different peppers or change the amount of each to give it even more kick!


1. To make the marinade, mix all the ingredients together in a large bowl. Toss the chicken through the marinade, cover with cling film and place in fridge for three hours.

2. Preheat a barbecue on medium heat.

3. Remove the chicken from the marinade and place in a bowl. Pour the marinade into a large saucepan and bring to the boil, then reduce the heat and simmer for 5 minutes or until reduced to a nice saucy consistency.

4. Meanwhile, cook the chicken thighs on the barbecue (skin side down first) for eight to 10 minutes on each side, or until they caramelise and char and are just cooked through. Brush the charred thighs with the reduced marinade. Remove the chicken and rest for 10 minutes in a warm place.

5. Pile the chicken on a large platter and sprinkle the mint and coriander. Serve immediately with lemon wedges.

Spicy BBQ Chicken Thighs

Grilling season is upon us! Light up your grill, crack open a beer, and start marinating these INCREDIBLE Spicy BBQ Chicken Thighs!

The brown sugar in the marinade creates a succulent glaze on the chicken that will make your taste buds go nuts. Feel free to adjust the sriracha to your desired level of heat. And if you don’t have any sriracha in your cupboard, you can substitute red pepper flakes.

One note for those of you thinking about it…I’ve tried this recipe with chicken breasts and I can strongly attest that is simply is not as good. Thighs are juicier and more flavorful – they are definitely the way to go for this recipe.

For me, the only thing that would make these Spicy BBQ Chicken Thighs better would be to grill them with my dad on our deck in Maine (Hi Dad!). That place is ultimate relaxation for me.

I followed others' suggestions changing amounts of some items as follows: only 1/2 cup sugar, 1/3 cup cider veinegar, 1 scant tbsp thyme, and 1/2 tsp cayenne. It was pretty good, but not spectacular.

I agree, too much cider vinegar. I cut it down to 2/3 C. I also added minced ginger (to taste) , and substituted 1/2 of the tomato sauce with low sodium V8. That seemed to round out the flovor better.

Well I decided to try this as something new along with the fact I was just scrounging around the kitchen for things. When I placed the "cider" in I thought too much, but to challenge that tast I cut 1.5 jalapenos. So you get that sweet taste then a quick shot of hot. Along with that I have decided to soak the chicken before hand in the sauce to allow more flavour in the chicken. Also I scrapped the use of the oven and went to the bbq since it was such a nice day outside. Take care, Hugh

I switched dijonnaise for the dijon mustard because I thought I had the mustard and didn't. Then later I made with the mustard. WHoa! Sub the dijonnaise every time! It is so much better, trust me!

This recipe is so easy and delicious. Just the right balance of sweet and spicy!

This was probably one of the best barbecue sauces I have ever tasted! It would be great also with chicken wings and a little more spice, like some tabasco sauce or even hotter sauce added to the recipe. I would definatly recommend this for anyone to make. And it's easy.

I originally was interested in this recipe, because the ingredients sounded like they would make a good sauce. I was a bit hesitant when I read some of the negative reviews on the taste of the sauce. I decided to make it anyway last night. I think that the problem with this recipe is the measurements. One whole cup of ANY KIND of vinegar would kill a sauce! I cut the amount to 1/3 cup. Also, 1/2 cup of brown sugar is PLENTY to sweeten the sauce. I was also conservative with the cayenne. With these changes, my chicken was delicious and my husband loved it! Try it my way!! You'll like it!

This a great recipe to serve for a dinner party. It is also fast and easy. I just came from a dinner party where it was served. There weren't any left overs.

I don't understand why this is a four-fork recipe. The chicken was much too tangy (almost sour), and I expected the sauce to be thicker, sort of like the barbecue sauces you buy at the store. It wasn't horrible, but there are probably better recipes out there. Personally, I think slapping on some K.C. Masterpiece would have made for better barbecued chicken, but apparently that's just me!

This was an easy recipe to make, and it took less time. This is something my child can help with. This was enjoyed by everyone who ate it. I would love to make this again in the future.

This sauce was delicious a great balance of sweet and spicy. The next day the chicken was delicious cold. The quantity of sauce this recipe makes is much too much for 2 chickens. It would probably be enough for at least 4!

THis is a fun dish for the family barbeque. The sauce is flexible in that it can be used with pork also. The dish is improved even further by cooking over applewood and charcoal. As written, this recipe is very pleasing and you just can't get enough.
